Barrel Aged Wild Porter
Barrel Aged Sours are here! Two years in the making, this range of sours have been sitting in a variety of oak barrels, quietly evolving and developing their own unique characters and personalities. It is been an absolute pleasure to sample and observe how each barrel (not just beer) changes over time.
Our Wild Porter used the barrels that aged our Imperial Stout in. The wild yeast and bacteria culture developed for this beer highlights some of the warming malt qualities from the roasted barley used to give the beer the dark shade. There are mild chocolate and coffee qualities, with a berry and stewed fruit overtone. It finishes silky smooth and cleanly, with just a hint of barnyard funk.
